Almond Meal Sugar Free Shortbread Cookies
Ingredients
2 cups Almond Flour, blanched
1 stick Butter, softened
Stevia to taste
pinch of Sea Salt
12 Whole Almonds
1 teaspoon Vanilla
1 teaspoon Almond Extract
Directions
1. Preheat oven to 300 degrees
2. Soften 1 stick of butter
3. Add 2 cups of almond flour and Stevia to taste
4. Mix well with a fork
5. Add vanilla and almond extract
6. Continue to mix
7. Roll into walnut size balls
8. Place on lightly oiled cookie sheet
9. Place in oven for 5 minutes
10. Remove and press down with fork in a criss cross fashion
11. Place a whole almond in center
12. Return to oven for an additional 15 to 17 minutes
13. Remove from oven and allow to cool before transferring to a rack
14. Serve and enjoy
