Turkey Sausage With Pepper And Onions
2 large yellow or sweet onions, thinly sliced
4 green or red bell peppers, julienned
1/4 c cold pressed olive oil
12 hot turkey sausages (or your favorite antibiotic, preservative, and sweetener free sausage– i.e.: Trader Joe’s Italian Sausage)
In a large sauté pan over medium heat, cook the onions and peppers in olive oil, stirring frequently until the peppers are soft and the onions are caramelized– about 30 minutes. Cook the sausages on a grill or brown them in a skillet and serve them atop a heaping mound of peppers and onions.
