Ketchup
Ingredients
6 medium Tomatoes, diced
½ small Onion, sliced
1 clove Garlic, crushed
1 tablespoon Cold Pressed Olive Oil
1-3 tablespoons aged Balsamic Vinegar
Stevia to taste
1 Bay leaf
Sea salt, to taste
Ground black pepper, to taste
Directions
1. Heat pan with olive oil to a medium heat
2. Add onion to the pan and reduce the heat to medium low
3. Cook onion slowly until caramelized (lightly browned)
4. Mix all additional ingredients in pan except Stevia and simmer on stove until thick, stirring often to prevent sticking
5. When desired thickness, add the Stevia and remove from heat
6. Puree and ladle into sterilized jars and seal immediately or place in small containers and freeze
