Red Cabbage, Pickled
Ingredients
½ medium Red Cabbage, shredded
2 Carrots, shredded
1 Red Onion, thinly sliced
1 Red Bell Pepper, thinly sliced
1½ cups Raw Fermented Coconut Water Vinegar
1 cup Water, spring or filtered
½ teaspoon Oregano Leaves, dried and crushed
½ teaspoon Crushed Red Pepper Flakes
¼ teaspoon Cumin
¼ teaspoon Coriander, ground
1 drop liquid Stevia or to taste
½ tablespoon Sea Salt or to taste
½ tablespoon Black Pepper, freshly ground
Directions
1. Combine the vegetables in a large bowl
2. In a medium saucepan, add the vinegar, water, spices, Stevia, pepper and salt and bring to a boil
3. Pour the hot pickling liquid over the vegetables
4. Mix the ingredients well and let stand for at least 24 hours before serving, stirring occasionally
5. This mixture will keep for 2 to 3 weeks covered in the refrigerator
