Bleu Cheese Log
Ingredients
8 ounces Cream Cheese, softened
1 cup Sharp Cheddar Cheese, shredded
½ cup Bleu Cheese, crumbled
1½ teaspoons Curry Powder
1 tablespoon Butter
½ cup Pecans, finely chopped
2 tablespoons fresh Parsley, minced
Directions
1. In a bowl, beat the cream cheese
2. Fold in cheddar cheese and bleu cheese
3. Cover and refrigerate for at least 2 hours
4. In a small skillet, sauté curry powder in butter for 1-2 minutes
5. Stir in pecans
6. Cook and stir for 1 minute
7. Stir in parsley
8. Cool slightly
9. Roll cheese mixture into two logs, about 5 minutes (using plastic wrap)
10. Roll in pecan mixture
11. Cover and refrigerate until serving
