Huevos Rancheros
Ingredients
2 small Tomatoes, diced
1 small Green Onion, diced
1 medium Jalapeno Pepper, deveined, seeded and chopped
1 clove Garlic, chopped
1 clove Garlic, pressed
½ cup Filtered Water, warm
½ teaspoon Lime or Lemon Juice, freshly squeezed
¼ teaspoon Cayenne Pepper
½ teaspoon Chili Powder
1 teaspoon Cumin, ground
Sea Salt, to taste
Black Pepper, freshly ground, to taste
2 tablespoons and 2 teaspoons Certified Organic Coconut Oil
15.5 ounces Black Beans, rinsed
4 large Organic, Pastured Eggs
4 6 inch Tortillas, warmed
½ cup Queso Fresco, crumbled
¼ cup Fresh Cilantro
Directions
1. In a large bowl, add the tomatoes, onion, jalapeno, chopped garlic, cayenne, chili powder, cumin, salt and pepper
2. Heat a medium skillet over low heat and add 2 teaspoons of coconut oil
3. Fry the salsa in the oil until it thickens slightly, 3 minutes
4. Remove to a bowl, add lemon or lime juice, and set aside
5. Using the same pan, add the beans, pressed garlic, water and a pinch of salt
6. Cook over low heat until warmed through, smashing slightly with a fork
7. Meanwhile, heat the remaining 2 tablespoons of oil in another skillet
8. Fry the eggs sunny-side up
9. Season with pepper
10. Place 1 warm tortilla on each plate
11. Divide the beans among them
12. top with a fried egg, some salsa and cheese
13. Garnish with cilantro and serve
