Greek Cucumber, Tomato and Onion Salad
Ingredients
4 Large Ripe Tomatoes, cut into eighths
2 Cucumbers, peeled and sliced
1 Red Onion, thinly sliced
½ cup Kalamata Olives
½ cup Feta Cheese (optional)
½ cup Fresh Parsley, de-stemmed and chopped
3 tablespoons Coconut Vinegar
¼ cup Cold Pressed Olive Oil
Sea Salt (to taste)
Black Pepper, freshly ground (to taste)
Directions
1. Place tomatoes, cucumbers, onion, olives, cheese and parsley into a bowl
2. Drizzle on the vinegar, oil and add salt and pepper
3. Toss well
Tip: If you are concerned about having onion breath, soak the onions overnight in coconut vinegar and olive oil. This oil/vinegar mixture can be used in the recipe.
