Tomato Coconut Soup
Ingredients
½ Onion (approximately 2.5 ounces)
3 medium Tomatoes
2 whole Black Peppercorns
1 whole Clove
½ inch stick Cinnamon
½ teaspoon Ginger, minced
½ teaspoon Garlic, minced
Stevia, to taste
½ teaspoon Sea Salt
½ cup Coconut Milk
Directions
1. Chop the onion and tomatoes roughly
2. In a saucepan, add the chopped tomatoes, chopped onion, peppercorns, clove, cinnamon, ginger and garlic
3. Mix well
4. Cover and heat on a medium to low heat
5. Stir intermittently
6. Turn the heat off once the tomatoes and onions are well cooked
This will take around 15-20 minutes
Alternately, the mixture can be cooked in a pressure cooker
7. Once done, allow the mixture to cool to room temperature
8. Using a blender or immersion blender, blend the mixture till you get a soup like consistency
9. Transfer this to the saucepan
10. Add Stevia, salt and coconut milk
11. Mix well and let the soup boil once
12. Turn off the heat and serve hot
