Marinated Vegetable Kabobs
Ingredients
Marinade
½ cup Balsamic Vinegar
2 tablespoons Cold Pressed Olive Oil
4 teaspoons Basil, dried
2 teaspoons Garlic Powder
Black Pepper, freshly ground, to taste
Vegetables
8 large Mushrooms, thickly sliced
1 large Bell Pepper, cored, seeded, cut in chunks
1 large Yellow Pepper, cored, seeded, cut in chunks
1 large Green Pepper, cored, seeded, cut in chunks
1 small Red Onion, cut in chunks
Directions
1. Mix marinade ingredients
2. Add vegetables
3. Cover, refrigerate and marinate 4 to 8 hours
4. Thread vegetables onto skewers
5. Place on grill
6. Grill 8 to 12 minutes, turning occasionally
