Zucchini & Mushroom Skillet
Ingredients:
1 tablespoon of butter
½ tablespoon of cold-pressed olive oil
1 zucchini, thinly sliced
½ sliced bell pepper
8 ounces mushrooms, sliced
½ medium red onion, sliced
1 clove garlic, minced
Sea salt & pepper to taste
Raw Parmesan cheese, grated
Instructions:
Heat butter and oil in a large skillet over medium heat. Add all ingredients stirring well. Cook for about 15 minutes or until vegetables are tender, stirring often. Sprinkle with some parmesan cheese and serve.
