Slow Cook Spicy Beef Stew
Ingredients:
3 pounds beef, cut into 1-inch cubes
Juice of 2 lemons
4 tomatoes, peeled, seeded and chopped or 1 can tomatoes
2 tablespoons tomato paste
2 medium onions, chopped
3 cups beef stock
¼ teaspoon ground coriander
2 cloves garlic, peeled and chopped
½ teaspoon dried green peppercorns, crushed
½ teaspoon ground allspice
2 teaspoons chili powder
¼ teaspoon cayenne pepper
Sea salt to taste
Instructions:
Marinate beef overnight in lemon juice. Place all ingredients except salt in a flameproof casserole or crock pot and cook gently in a 250 degree oven for about 12 hours. (You may also use a crock pot set at medium temperature.) Season to taste. Serves 6-8.
