Cauliflower Rice
Ingredients:
1 head Cauliflower
2 tablespoons Organic Coconut Oil or Cold-Pressed Olive Oil
Sea Salt,to taste
Black Pepper, freshly ground, to taste
1 clove Garlic, diced
1 tablespoon Coconut Aminos
Instructions:
1. Place the cauliflower into a food processor and pulse until it has a grainy rice-like consistency or use a cheese grater
2. Add salt and pepper
3. Add garlic
4. Sauté the cauliflower in a pan with oil
(Be careful not to overcook!)
5. Remove from heat and add coconut aminos
Options:
1. Add curry, nutmeg, cinnamon, cayenne and ginger
2. Add sausage, mushrooms, rosemary and onions
3. For added flavor/richness reduce 1/4 cup of chicken or beef broth and replace oil
