Baked Parmesan Zucchini
Ingredients:
4 Organic Zucchinis, quartered lengthwise
½ cup Parmesan, freshly grated
½ teaspoon Thyme, dried
½ teaspoon Oregano, dried
½ teaspoon Basil, dried
¼ teaspoon Garlic Powder
Sea Salt to taste
Black Pepper, freshly ground, to taste
2 tablespoons Cold-Pressed Olive Oil
2 tablespoons Fresh Parsley, chopped
Directions:
1. Preheat oven to 350 degrees
2. Coat a cooling rack with olive oil and place on a baking sheet; set aside
3. In a small bowl, combine Parmesan, thyme, oregano, basil, garlic powder, and salt and pepper to taste
4. Place zucchini on prepared baking sheet
5. Drizzle with olive oil and sprinkle with parmesan mixture
6. Place in oven and bake until tender, about 15 minutes
7. Broil for 2-3 minutes, until crisp and golden brown
8. Garnish with parsley
