Horchata with Rice and Almonds
Ingredients
1 cup uncooked White Long Grain Rice
2 cups Blanched Almonds (fully cooled)
5 cups Water, filtered
½ cup Organic Whole Milk
½ tablespoon Vanilla Extract
½ tablespoon Cinnamon, ground
Stevia, to taste
Directions
1. Pour the rice, almonds and water into the bowl of a blender
2. Blend until the rice just begins to break up, about 1 minute
3. Let rice, almond and water mixture stand at room temperature for a minimum of 3 hours
4. Strain the rice, almond and water mixture through cheesecloth into a pitcher and discard the rice and almond pulp
5. Stir the milk, vanilla, cinnamon, and Stevia into the rice and almond water
6. Chill and stir before serving over ice
Options: Replace one of the cups of almond with coconut and garnish with lime zest for a tropical twist
