Cauliflower Crust Pizza
Ingredients
2 teaspoons melted Butter or Organic Coconut Oil
2½ cups Organic Cauliflower (about ½ large head)
1 large Organic Free-Range Egg, lightly beaten
1¼ cups Raw Mozzarella Cheese, shredded
2 tablespoons Parmesan Cheese, grated
Sea Salt to taste
Black Pepper, freshly ground, to taste
¼ cup fresh Tomato Sauce
1 cup Organic Grape Tomatoes, sliced in half
2 cloves Garlic, sliced
¼ teaspoon Crushed Red Pepper Flakes
Fresh Organic Basil Leaves (optional)
Instructions
1. Line a rimmed baking sheet with parchment paper, and preheat oven to 425 degrees
2. Grate the cauliflower using a box grater until you have two cups of cauliflower crumbles
3. Steam until soft and let cool
4. Mix in the egg, one cup mozzarella, parmesan cheese, and salt and pepper
5. Once combined pat into a 10-inch round prepared pizza pan. Coat lightly with melted butter or coconut oil and bake for 10-15 minutes, or until golden
6. Top pizza with the sauce, ¼ cup mozzarella, grape tomatoes, garlic, and red pepper flakes
7. Bake until melted and bubbly, another 10 minutes
8. Top with basil before serving
