Chile-Lime Peanuts
Ingredients
6 tablespoons Lime Juice, freshly squeezed
6 tablespoons Chile Powder
4 teaspoons Sea Salt
½-1 teaspoon Cayenne Pepper
6 cups Peanuts, de-shelled, skinned and unsalted
Directions
1. Position racks in the upper and lower thirds of oven
2. Preheat oven to 250 degrees
3. Whisk lime juice, Chile powder, salt and cayenne in a large bowl
4. Add peanuts
5. Toss to coat
6. Divide between 2 large rimmed baking sheets
Spread in an even layer
7. Bake, stirring every 15 minutes, until dry, about 45 minutes
8. Let cool completely
9. Store in an airtight container
