Spicy Beef Chili
Ingredients
2 pounds Italian Sausage
2 pounds Beef Chuck, ground
2 large Onions, chopped
2 large Bell Peppers, chopped
1-4 Jalapenos, deveined, seeded and chopped (optional)
8 cloves Garlic, finely chopped
Sea Salt
Black Pepper, freshly ground
½ cup Chili Powder
2 tablespoons Cumin, ground
4 teaspoons Paprika
4 teaspoons Oregano, dried
4 tablespoons Tomato Paste
16 ounces Red Wine
¼ cup Balsamic Vinegar
4 tablespoons unsweetened Cocoa Powder
56 -ounces organic Salsa
3 cups Beef Broth, plus more if needed
15 -ounces Black Beans, rinsed (optional)
2 tablespoons Hot Sauce
Directions
1. Season the beef with salt and cook with sausage in a large pan, breaking up the meat with a utensil, until charred
2. Add the onions, jalapenos and bell peppers and cook, stirring, until soft
3. Add the garlic, salt, black pepper, chili powder, cumin, paprika, oregano and salsa and cook, stirring
Add a splash of broth or wine if the mixture begins to stick
4. Add the vinegar, wine and tomato paste and simmer until almost completely reduced, about 3 minutes
5. Add the cocoa powder, salsa, beef broth and beans (optional) and bring to a simmer over low heat
6. Cook, stirring occasionally, until the chili thickens slightly, about 1 hour, 30 minutes
7.Stir the hot sauce into the chili and season with salt
8. Add some beef broth if the chili is too thick
