Green Healing Broth
Ingredients
4 medium Zucchini, ends discarded and zucchini sliced into rounds
1 pound String Beans, ends trimmed
2 stalks Organic Celery, chopped
1 medium Onion, chopped (optional)
2 cloves Garlic, chopped (optional)
1-2 bunches Parsley, tough stems removed
4 cups Water or Broth (broth optional)
¼ cup fresh Basil, chiffonade (optional)
Sea Salt, to taste (optional)
Black Pepper, to taste (optional)
Cayenne Pepper, to taste (optional)
Directions
1. Place all ingredients in a pot and bring to a boil
2. Skim any foam on the surface, lower the heat and simmer, covered until the vegetables are tender, about 15 minutes
3. Puree soup in the pot with a handheld blender or in a blender in batches
4. Eat warm
Notes:
This recipe was inspired by Bieler and his famous healing broth. However, I’ve added items to bring a little flavor to it. If you want to make a strict Bieler’s broth remove all optional items.
