African Peanut Stew
Ingredients
2 cups Basmati Rice
1 tablespoon Certified Organic Coconut Oil
2 Yellow Onions, diced about ½ inch
6 cloves Garlic, minced
3 Jalapenos, seeded and finely chopped
2 tablespoons Ginger, freshly minced
2-3 pounds Organic, Pastured Turkey
1 tablespoon Curry Powder
4 cups Chicken or Turkey Broth
2 cups Tomatoes, chopped with juices
⅓ cup Chunky Organic Peanut Butter
1¾ pounds Sweet Potatoes or Potatoes, diced about 1 inch
4 cups Green or Red Swiss Chard, shredded
Sea Salt, to taste
Black Pepper, freshly ground, to taste
1 tablespoon Coriander, freshly ground
1 teaspoon Cayenne (or to taste)
⅓ cup Cilantro, freshly and coarsely chopped (as garnish)
4-5 Whole Peanuts, skinned and de-shelled (as garnish)
Directions
1. Fill a medium saucepan with 1¾ cups water
2. Add a pinch of salt, and bring to a boil
3. Add the rice, stir, and wait until the water comes back to a full boil
4. When it does, turn the heat down as low as it can go, and then cover
5. Cook for 15 minutes
6. Set aside
7. Meanwhile, in a 5-6 quart saucepan or stockpot, heat oil on medium
8. Add onions and sauté, stirring occasionally, until tender, 5 to 7 minutes
9. Add garlic, jalapenos, curry powder and ginger
10. Sauté for 1 more minute
11. Stir in broth, turkey, tomatoes, peanut butter, coriander and cayenne
12. As soon as sauce thickens (about 30 seconds to 1 minute), remove from heat—overheating will break down arrowroot’s thickening properties
13. Add potatoes and chard
14. Increase heat to medium-high
15. Bring to a boil and then reduce to a simmer
16. Cook uncovered for 12-14 minutes, until potatoes and chard are tender
17. Taste for salt, adding more if needed
18. Cover pot and simmer gently 60-90 minutes, until meat easily falls off the bone
19. Remove the turkey pieces and set them in a bowl to chill, until cool enough to touch
20. Remove and discard the skin if you want, or chop it and put it back into the pot
21. Shred meat off the bones and put the meat back in the pot
22. Serve over rice
Option: Stew does not have to be eaten over rice
