Cheesy Baked Potato Casserole with Prosciutto
Ingredients
3-4 large Potatoes, uncooked, peeled (or not if organic) and sliced no thicker than a dime
1 cup Aged Cheddar Cheese, grated (to taste)
4-5 cloves Garlic, crushed
1 cup Organic Raw Whole Milk or Heavy Cream
1 teaspoon Sea Salt, or to taste
1 teaspoon Black Pepper, freshly ground, or to taste
1 teaspoon Paprika or Cayenne (paprika for mild and cayenne for spicy)
1 Organic Pastured Egg, beaten
4 slices Prosciutto cut into thin strips (optional)
Directions
1. Layer the bottom of an oven dish (preferably 6 inches deep) with 2-3 layers of potatoes
2. Lightly sprinkle paprika, salt and pepper over the layer
3. Cover potatoes with a thick layer of grated cheese
4. Crush one clove of garlic over the top of the cheese, spreading out evenly
5. Continue to do this step 3-4 times depending on how deep your oven dish is
6. End up with a cheese and garlic layer to finish, not potatoes
7. Mix milk and egg together and pour over the top of the cheese
8. Sprinkle prosciutto strips evenly over the top
9. Bake at 350 degrees until potatoes are soft, prosciutto crisp and cheese topping is browned off
Cooking time will vary depending on number of layers and thickness of potato slices
