Spicy Barbecue Sauce
Ingredients
6 Campari Tomatoes, sliced in half and seeded
2 Jalapeños, sliced in half and seeded
3 cloves Garlic
1 tablespoon Bacon Fat, melted
¾ teaspoon Sea Salt
1 Tablespoon Certified Organic Coconut Oil
1 Shallot, minced
1 teaspoon Organic Spicy Mustard
1 teaspoon Paprika, smoked
1 teaspoon Chipotle Chili Powder
1 teaspoon Cumin, ground
1 cup Organic Chicken Broth
1½ Limes, juiced
6 ounces Tomato Paste
Directions
1. Pre-heat the oven to 450 degrees
2. Place the tomatoes, garlic and jalapeños in a baking dish or roasting pan
3. Drizzle bacon fat over everything
4. Sprinkle ¼ teaspoon of sea salt over everything
5. Roast for approximately 15 minutes
6. Set aside and allow it to cool
7. Heat coconut oil in a medium sauce pan over medium heat
8. Press the roasted garlic and add to the sauce pan
9. Immediately add the minced shallot
10. Sauté until shallot is soft and translucent
11. Add the mustard, smoked paprika, chipotle chili powder, cumin and ½ teaspoon salt
12. Stir to blend in the spices
13. Add the chicken broth, lime juice, and tomato paste
14. Stir again (use a whisk if you have one) until smooth
15. Add roasted tomatoes and jalapeños and stir
16. Bring everything to a soft boil
17. Reduce it to a simmer and cover it with a lid
18. Simmer for about 25 minutes, stirring occasionally
19. Remove from heat, and allow the mixture to cool
20. Pour the mixture into a blender or food processor
21. Blend until the whole mixture is smooth
