Lemon Tarragon Vinaigrette
Ingredients
2 tablespoons Lemon Juice, freshly squeezed
2 tablespoons Shallots, minced
1 tablespoon Tarragon, freshly chopped
1 tablespoon Dijon Mustard
½ cup Cold Pressed Olive Oil
½ cup Coconut Vinegar
Sea Salt, to taste
Black Pepper, freshly ground, to taste
Directions
1. Combine the lemon juice, vinegar, shallot, tarragon and mustard in a small bowl
2. Gradually whisk in the oil
3. Season to taste with salt and pepper
4. Cover and chill
Note: Vinaigrette can be made up to 3 days ahead of time.
