Glazed Baby Carrots
Ingredients
2-3 bunches Baby Carrots, green tops removed
3 tablespoons Organic Chicken Broth
2 tablespoons Unsalted Butter or Cold Pressed Olive Oil
Sea Salt, to taste
Black Pepper, freshly ground, to taste
Directions
1. Peel and trim carrots
2. Spread them out in the bottom of a large skillet fitted with a lid
3. Add chicken broth
4. Cover
5. Place skillet over medium-high heat
6. Bring to a simmer, cooking carrots until just fork-tender, about 4 minutes
7. Remove cover
8. Add butter, salt and pepper
9. Toss until carrots are evenly coated
10. Let cook uncovered 2 more minutes to caramelize
11. Serve warm
