Sweet Potatoes
Ingredients
8 medium Sweet Potatoes
1 teaspoon Vanilla
½ teaspoon Sea Salt
½ teaspoon Nutmeg, freshly ground
1 teaspoon Cinnamon
¼ cup Butter, melted
¼ cup Coconut Cream, melted
1 cup Pecans, chopped
Stevia, to taste
Directions
1. Preheat oven to 375 degrees
2. Wash sweet potatoes and place on a cookie sheet and bake in oven for 1 hour
3. Remove from oven, cool, peel and slice
4. Arrange sweet potatoes in the bottom of a baking dish
5. Melt butter and coconut cream on low heat
6. Add vanilla, sea salt, nutmeg, cinnamon and stevia to the mixture
7. Stir in and pour over the sweet potatoes
8. Sprinkle with the chopped nuts
9. Cover and bake in 375 degree oven for 35 minutes
10. Serve warm
