Spanish Rice
Ingredients
15 ounces Tomatoes, diced
1½ cups Organic Pastured Chicken Broth
2 cloves Garlic, minced
½ cup Onion, minced
1 Jalapeno, deveined, stemmed and minced (optional)
1¼ cups Rice, uncooked
1 tablespoon Butter
2 teaspoons Chile Powder
¾ teaspoon Oregano, dried
1 teaspoon Cumin, ground
½ teaspoon Cayenne (optional)
1 teaspoon Sea Salt or to taste
½ teaspoon Black Pepper, freshly ground
Ingredients for Optional Garnish:
1 Green Onion, finely sliced
¼ cup Cilantro, diced
¼ cup Cheddar Cheese
Directions
1. In medium saucepan, combine all ingredients
2. Bring to a boil and reduce heat to low
3. Cover and simmer 25 minutes or until rice is done
4. Garnish with green onions, cilantro and/or cheddar cheese
