Sausage, Mushroom, and Cauliflower Faux Risotto
Ingredients
1 pound Sausage
2 cups Beef Broth
1 head Cauliflower
2 tablespoons Cold-Pressed Olive Oil
1 tablespoon Butter
1 medium Onion, finely chopped
2 cloves Garlic, crushed and peeled
2 cups Fresh Mushrooms (any kind you prefer), sliced
Sea Salt to taste
Black Pepper, freshly ground, to taste
2 tablespoons Red Wine or Balsamic Vinegar
1 sprig Rosemary
3 tablespoons Fresh Parsley, finely chopped (for garnish)
2 tablespoons Parmesan Cheese, grated (optional, for garnish)
Instructions
1. Add onion to olive oil and butter
2. Cook on low heat until onions are caramelized light brown
3. Do not burn, stir often
4. In a separate pan, while onions are caramelizing, brown sausage
5. Wash head of cauliflower and grate using a grater or the shredding blade of your food processor
6. Add garlic, beef broth and red wine/balsamic vinegar to onion mixture
7. Drain grease from sausage
8. Add cauliflower and sausage to onion mixture
9. Bring to a boil
10. Reduce heat to low
11. Place rosemary sprig on top of mixture
12. Simmer for 20 minutes or until the liquid is reduced
13. Remove from heat
14. Add salt and pepper
15. Add parmesan and parsley
16. Serve
