Jicama, Carrot and Red Pepper Slaw
Ingredients
4 Carrots, peeled and julienned or shaved
2 medium Jicama, peeled and julienned or shaved
2 large Red Bell Peppers, cored and very thinly sliced
½ Red Onion, halved lengthwise and very thinly sliced lengthwise, rinsed, and patted dry
6 tablespoons Cold Pressed Olive Oil
6 tablespoons Raw Coconut Vinegar
3 tablespoons Lime or Lemon Juice, freshly squeezed
2 tablespoons Cilantro Leaves, minced
1 teaspoon Sea Salt
1 teaspoon Black Pepper, freshly ground
Stevia, to taste
½ teaspoon Chili Powder
½ teaspoon Red Chile Flakes, crushed
Directions
1. Put cut vegetables in a large bowl
2. Combine oil, vinegar, lime or lemon juice, minced cilantro, salt, pepper, Stevia, chili powder, and chile flakes in a small bowl and stir
3. Add dressing to vegetables, shake to combine well
4. Let sit 15 minutes, stirring 2 or 3 times
5. Serve garnished with cilantro, if you like
