Almond Chicken
Ingredients:
½ cup almond meal (found at Trader Joe’s)
2 chicken breasts, cooked and cubed
4 tablespoons balsamic vinegar
2½ tablespoons butter
½ teaspoon sea salt
1 teaspoon ground pepper
3 garlic cloves, crushed
3 tablespoons fresh basil, chopped
Instructions:
Heat medium saucepan on medium heat. Melt butter in bottom of pan. Stir all ingredients together in a bowl and then toss into pan. Stir as it cooks for about 10 minutes. Grill some asparagus & red peppers to serve with it. Serves 2.
