Gravy from Pork Roast
Ingredients
4 cups Organic Chicken Broth
Pork Fat Drippings from pan of Pork
½ cup Organic Whole Milk
2 -3 teaspoons Arrowroot Powder (or more depending on desired thickness)
Sea Salt, to taste
Black Pepper, freshly ground, to taste
Directions
1. Remove the roast from the pan and place on a serving platter to rest
2. Add broth or stock to the pan on medium high heat
3. Deglaze the drippings and broth mixture by stirring constantly while scraping the bottom of the pan
4. Increase heat to high and bring to a boil
5. Mix arrowroot powder and whole milk or heavy cream in a mason jar (to make a slurry) at 1 teaspoon to 1-2 cups of drippings and broth mixture (depending on your desired thickness)
6. Place 2 tablespoons of broth/dripping mixture into the mason jar with the slurry and shake well until all lumps are gone
7. Stir with a wire whisk and add the slurry slowly to the liquid in the pan
8. Reduce to medium heat and keep cooking until the slurry has thickened and the gravy is smooth
9. Continue to cook slowly and stir constantly for approximately 10-15 minutes
10. Season the gravy with salt and pepper and herbs to taste
