Tarragon Chicken with Olives
Ingredients
2 tablespoons Butter
2 tablespoons Garlic, minced
1 large Lemon, juiced
½ teaspoon Tarragon, dried
4 Organic Free Range Chicken Breasts, skinned and de-boned
20 Green Olives, pitted
Directions
1. Preheat oven to 350 degrees
2. Melt the butter in an oven safe pan over medium heat
3. Stir the garlic, lemon juice and tarragon into the butter
4. Cook the chicken breasts in the butter mixture until evenly browned, 3 to 5 minutes per side
5. Add the olives to the pan
6. Transfer the pan to the preheated oven
7. Bake until the chicken is no longer pink in the center and the juices run clear, about 20 minutes
An instant read thermometer should read at least 165 degrees when inserted in the center
