Scrambled Egg Wraps
Ingredients
1 medium Sweet Red Pepper, chopped
1 medium Green Pepper, chopped
6 slices Bacon, thinly sliced
2 tablespoons Bacon Drippings or Certified Organic Coconut Oil
5 Plum Tomatoes, seeded and chopped
6 Organic, Pastured Eggs
½ cup Heavy Cream or Coconut Milk
¼ teaspoon Sea Salt
Black Pepper, freshly ground, to taste
6 Tortillas/Wraps, warmed
½ cup Cheddar Cheese, grated
Directions
1. In a large skillet cook the bacon
2. Reserve 2 tablespoons of the fat, and set aside
3. In the same skillet, sauté peppers in drippings, or oil, until tender
4. Add tomatoes
5. Sauté for 1 to 2 minutes longer
6. Meanwhile, in a large bowl, whisk the eggs, milk and salt
7. Reduce heat to medium
8. Add egg mixture to skillet
9. Cook and stir until eggs are completely set
10. Spoon ⅔ cup mixture down the center of each tortilla
11. Add a sprinkle of cheese on each
12. Roll up
