Greek Meatballs with Tzatziki Sauce (Grain Free)
Ingredients
Meatballs:
1 pound Beef, ground
¾ cup Feta Cheese, crumbled
½ cup Red Onion, chopped
1 tablespoon Coconut Flour
¼ cup Parsley, de-stemmed and chopped
2 teaspoon Oregano, dried
1 large Organic Pastured Egg
Sea Salt (to taste)
Black Pepper, freshly ground (to taste)
Tzatziki Sauce:
1 cup Plain Whole Milk Yogurt
1 cup Cucumber, seeded and grated
2 cloves Garlic, finely minced
1 tablespoon Lemon Juice, freshly squeezed
2 tablespoons Dill, freshly chopped
Sea Salt (to taste)
Directions
1. Preheat oven to 350 degrees and adjust rack to the middle position
2. Place all of the meatball ingredients in a large bowl
3. Using your hands, massage the mixture until combined (don’t squeeze or overwork)
4. Using a 2-inch cookie scoop, spoon the meatball mixture into balls and place each meatball in a baking sheet lined with parchment paper
5. Repeat with remaining mixture
6. Bake for 15-18 minutes, until cooked through
7. Meanwhile, place all of the sauce ingredients in a bowl and stir until combined
8. Serve meatballs with tzatziki sauce
*This recipe can be made on a grill as well.
