Chicken Curry with Green Apple
Ingredients
2 tablespoons Cold-Pressed Olive Oil or Organic Coconut Oil1 Yellow Onion, diced
1 large Organic Green Apple, peeled, cored, and diced
16 ounces Homemade Stewed Tomatoes in their own juice
1 cup Organic Chicken Broth
1 teaspoon Lemon Juice, freshly squeezed
1 tablespoon Curry Powder (or more, to taste)
1 pound boneless, skinless Organic Free-Range Chicken Breasts, cooked and chopped
Optional garnishes: Unsweetened Toasted Coconut, Fresh Mango Chutney, chopped Onion, Uncured Bacon (cooked and crumbled)
Instructions
- Heat oil in a large frying pan over medium-high heat
- Add onion and cook until slightly softened, about 3 minutes
- Add apple, tomatoes and their juice, broth, lemon juice, and curry powder
- Simmer uncovered 35 minutes
- Add chicken and heat through, about 5 minutes
- Serve with assorted garnishes on the side
