Calabaza con Pollo
Ingredients
1 (2 ½ pound) Organic Free-Range Chicken, cut up
1 Onion, chopped
½ Organic Bell Pepper, chopped
2 cloves Garlic
¼ – ½ teaspoon Cumin
2 cups Tomatoes
1 medium Calabaza Squash, seeded and diced (any summer squash may be substituted)
Sea Salt to taste
Black Pepper, freshly ground, to taste
1-2 tablespoons Certified Organic Coconut Oil
Instructions
1. Add oil to a pan and heat to medium-high
2. Sauté chicken until well browned
3. Add a little filtered water, cover, and simmer for 15 minutes
4. Remove chicken to a plate and debone, add onion, bell pepper, and garlic to the chicken fat and sauté for 2 minutes
5. Add tomatoes, salt, pepper, and cumin and cook for about 5 minutes
6. Pour sauce into another container, return chicken to the skillet, add Calabaza, and cover all with sauce
7. Cover the pan and simmer for about 15 minutes
