Paleo Zucchini Hummus
Ingredients
1 medium Zucchini
¼ cup Lemon Juice, freshly squeezed
¼ cup Tahini
1 tablespoon Cold-Pressed Olive Oil (plus extra for garnish)
1 teaspoon Cumin
½ teaspoon Sea Salt
¼ teaspoon Black Pepper, freshly ground
2 cloves Garlic, chopped (1 for milder flavor)
dash Paprika for garnish
Instructions
- Peel, cut into 2 inch chunks and lightly steam zucchini for 2-3 minutes
- Drain and chill until cool
- Place the lemon juice and tahini in a food processor and blend for about 30 seconds or until well combined and creamy
- You may need to scrape the sides once or twice to get the ingredients to fully combine
- Add the zucchini, oil, cumin, salt, pepper and garlic and blend until smooth
- Again, you may need to scrape the sides once or twice
- Transfer the hummus to a medium sized bowl and place in the refrigerator for at least 30 minutes
- Serve with a drizzle of olive oil and a sprinkling of paprika
