Lemon-Thyme Whipped Ricotta
Ingredients
15 ounces Ricotta
2 tablespoons Thyme, chopped (or more for garnish)
2 teaspoons Shallot or Chives, minced
2 teaspoons Lemon Zest, freshly grated
¼ cup Lemon Juice
1 teaspoon Black Pepper, freshly ground
½ teaspoon Sea Salt
2 teaspoons Cold Pressed Olive Oil
Directions
1. Combine ricotta, thyme, shallot (or chives), lemon zest, lemon juice, pepper and salt in a food processor
2. Puree for a few seconds until smooth
3. Transfer to a serving bowl and swirl the top with the back of a spoon
4. Drizzle with oil and garnish with thyme
5. Serve chilled with vegetables or use as a spread
