Tapioca Pudding
Ingredients
2 cups Filtered Water
3 tablespoons small Pearl Tapioca
⅔ cup Raw, Whole Milk, or Coconut Milk
1 teaspoon Vanilla
⅛ teaspoon Sea Salt
¼ teaspoon Stevia
Directions
1. In a saucepan, bring water to a boil
2. Whisk in tapioca pearls and continue to stir frequently for 17 minutes
3. Reduce heat to a low simmer
4. Whisk in milk, salt and Stevia and continue to stir frequently for another 10 minutes
5. Remove from heat and stir in vanilla
6. Pour into serving bowls and refrigerate covered until chilled
