Roasted Tomato Caprese
Ingredients
4 Large Tomatoes
1½ tablespoons Cold Pressed Olive Oil
1 clove Garlic, pressed
Sea Salt, to taste
Black Pepper, freshly ground, to taste
1 pound Fresh Mozzarella, thinly sliced
2 tablespoons Basil, finely chopped
Directions
1. Remove the tops from the tomatoes
2. Remove the pulp with a spoon to form a bowl
3. Combine the olive oil and garlic in a small bowl
4. Brush mixture onto each tomato
5. Season with salt and pepper
6. Arrange tomatoes on a grill and roast until tender, 9-12 minutes (or slightly wrinkled)
7. Remove from grill
8. Add mozzarella to the inside of the tomato
9. Continue roasting until the cheese is nicely melted, 2-3 minutes
10. Top with basil
11. Serve immediately
