Spinach and Egg Breakfast Wrap with Avocado and Feta Cheese
Ingredients
1 tablespoon Certified Organic Coconut Oil or Butter
5 ounces Baby Spinach, chopped
6 Organic, Pastured Eggs
½ teaspoon Sea Salt
¼ teaspoon Black Pepper, freshly ground
4 ounces Feta, crumbled
1 Avocado, sliced
4 Tortillas/Wraps, warmed
Hot Sauce
Directions
1. Heat oil or butter over medium heat
2. Add spinach and cook, stirring, until wilted, about 2 minutes
3. Whisk together eggs in a small bowl
4. Add eggs to skillet and cook, stirring, until cooked through, about 3 to 4 minutes
5. Season with salt and pepper
6. Place ¼ of egg mixture in the center of each tortilla
7. Sprinkle with about 1 ounce of cheese
8. Top with hot sauce and 4 slices of avocado
9. Fold burrito-style
10. Slice in half and serve
