Meatloaf with Vegetables
Ingredients
1½ pounds Ground Beef
1 Organic Egg
1 medium Tomato
1 medium Onion, cut in pieces
1 sprig of Parsley
1 stalk of Celery, cut in pieces
½ Green Pepper, cut in small pieces
1 Carrot, cut in pieces
Sea Salt, to taste
Black Pepper, freshly ground, to taste
Directions
1. Place tomato into blender first
2. Push down on tomato to release juices so that blender blades will turn easily
3. Add egg and blend for a few seconds
4. Add remaining vegetables and blend until fairly smooth
5. Empty blender contents into bowl and mix well with ground beef
6. Season to taste with salt and pepper
7. Form mixture into a loaf and place in a shallow pan
8. Spread top with homemade ketchup or sugar free ketchup
9. Bake at 350 degrees for about 1 hour
