Beef Enchilada Casserole
Ingredients
Cold Pressed Olive Oil
6 Tortillas
2-3 pounds Organic Beef, ground
1 medium Onion, diced
2 cloves Garlic, minced
1 Jalapeno, deveined and seeded and minced finely (optional)
1 teaspoon Chili Powder
½ teaspoon Cumin
1 teaspoon Mexican Oregano
Sea Salt to taste
Black Pepper, freshly ground, to taste
2 cups Enchilada Sauce
1-2 cups Sour Cream
1 cup Cheddar Cheese, grated
1 cup Mozzarella, grated
1 Green Onion, finely chopped for garnish
Cilantro, for garnish
Limes, cut in wedges for garnish
Directions
1. Preheat oven to 350 degrees
2. Drizzle olive oil into bottom of 12-inch skillet over medium heat
3. Once skillet is warm, add a tortilla, one at a time, to the skillet
4. Cook until crisp on each side and place onto a kitchen pan lined with paper towels
5. Add onions, jalapeno, and garlic to skillet
6. Cook until just tender
7. Remove to a bowl and set aside
8. Add beef and seasonings to skillet and cook until completely browned
9. Remove from heat and drain away any drippings
10. Add onions and garlic back to beef and stir to combine
11. Spoon about ½ cup of enchilada sauce into the bottom of a 9×13 casserole dish that has been lightly coated with oil
12. Spread enchilada sauce to coat the bottom of the casserole dish
13. Place 3 tortillas on top of the enchilada sauce, overlapping them slightly at the edges to make all 3 tortillas fit lengthwise
14. Ladle on additional enchilada sauce, about ½ cup
15. Layer on beef, onion and garlic mixture, making sure to spread mixture evenly over tortillas and enchilada sauce
16. Top with large dollops of sour cream and spread slightly
17. Sprinkle on a little of both cheeses
18. Repeat layering with 3 more tortillas, enchilada sauce, beef mixture, sour cream, and end with cheeses
19. Bake in oven until cheeses have melted, about 20 minutes
20. Garnish with green onions, cilantro and lime wedges
21. Serve warm
Options:
You may substitute any other meat or bean for ground beef in the recipe.
Additionally, you may add beans, lettuce, or diced tomatoes to the recipe, if desired.
Bake as instructed in the recipe; however, note that baking time may take a bit longer to make sure all ingredients are heated throughout.
