Curried Cashews
Ingredients
6 tablespoons Lemon Juice, freshly squeezed
6 tablespoons Curry Powder
4 teaspoons Sea Salt
6 cups Cashews, unsalted
Directions
1. Position racks in the upper and lower thirds of oven
2. Preheat oven to 250 degrees
3. Whisk lemon juice, curry powder and salt in a large bowl
4. Add cashews
5. Toss to coat
6. Divide between 2 large rimmed baking sheets
Spread in an even layer
7. Bake, stirring every 15 minutes, until dry, about 45 minutes
8. Let cool completely
9. Store in an airtight container
